Dark purple with hues of ruby.
Fragrance and perfume lift the dark plum and spice aromatics effortlessly in the glass. Dense and brooding but open knit this wine presents an abundant and wonderful concentration of fruit. Some subtle roasting pan complexity adds dimension while wild thyme and sage aromas hint at what is to come. There is freshness and vibrancy to the nose giving great appeal.
The wine has a very positive core of ripe plummy fruit, voluminous with depth and density. This is joyful drinking wine. Texturally the palate is slippery, succulent and generous with velvety tannins leading into a svelte exit of fine and focused acidity.
This acid provides the rails to elegantly carry the fruit concentration and tannin structure giving length and persistence. The depth and power of the 2013 but more refined and focused. Cellar for 5 to 8 years.
Food – No foams needed! Stick with Venison or Game based protein, preferably from things with horns. Perhaps 2 bottles with friends over a slow roasted shoulder of goat, the sauce will be critical, something rich with a hint of juniper or the like, accompanied by spuds roasted to perfect crunch in duck fat.
